Instructions
Preheat a fan forced oven to 360degF.
Melt the butter in the microwave. Combine melted butter with monkfruit in a mixing bowl and beat until fully mixed. Next add vanilla extract and egg; whisk to incorporate.
Add the almond flour, baking powder, xantham gum and salt. Whisk one more time until there are no lumps of almond flour remaining.
Once combined, add chocolate chips using a silicone spatula.

Use a small cookie scoop to divide and shape the dough into 15 portions and arrange them on an oiled baking tray. Bake at 360F for 10-12 minutes. When the edges become brown, remove from the oven; even though they might seem underdone at this stage, they’ll firm up when cool.
Notes Its If your cookies don’t flatten after 5 minutes in the oven, manually pressing them with a fork may help them flatten faster.
