Trust me- your tastebuds will thank you!
Mexican Steak Strips with Salad and Guacamole.
Let’s get our steak lovers started here: picture this: succulent strips of steak cooked to perfection with an irresistibly crunchy exterior and juicy interior; it’s like having a party in your mouth! So here’s how you do it:

Step One of Steak Prep:
For optimal results, remove your steak from the refrigerator at least 10 minutes prior to beginning to cook it. Pat it dry with paper toweling to absorb any extra moisture that has accumulated, as this step is crucial in creating an even sear on your steak. Slice into thin strips and season as desired (e.g. cumin, paprika and chili powder are my fave), using salt, pepper and any flavorful taco seasoning of choice (I use cumin, paprika and chili powder as my go-to seasoning).
Cooking Steak:
Preheat a cast-iron skillet or pan over high heat, until it begins to smoke slightly. Add oil and then your steak strips, cooking until all sides have turned a beautiful shade of brown. Take the pan off the heat when complete and keep warm until ready to serve!
Crispy Mexican Tofu with Salad and Guacamole
Now, for my fellow plant-based enthusiasts, let’s talk tofu! This crispy fried tofu recipe is truly remarkable; with its perfect crunch on the outside and soft, velvety interior. Additionally, its preparation couldn’t be simpler!

Prep Tofu:
Preheat the oven to 400degF (200degC). Cut your tofu into cubes and place them on a clean kitchen towel or paper towels, patting each dry well – this step is key in getting a crispy texture! Next, heat some olive oil over medium-high heat in an oven-safe skillet (if available); otherwise use regular frying pan with parchment paper as your baking tray instead.
Cooking Tofu:
When your oil is hot, add the tofu and a pinch of salt and fry for two or three minutes until lightly golden in color. Next, stir in some tamari soy sauce and taco seasoning if desired (or other flavors you desire) until everything has been evenly distributed across the tofu. Transfer any oven-safe skillet directly into the oven if possible or transfer it onto parchment-lined baking tray before placing back into oven for 15 minutes to create crispy yet delectable tofu!
Mexican Chicken served with Salad and Guacamole
And for those who love chicken, this Mexican-inspired chicken recipe is an incredible hit! Super simple yet packed with flavor – here’s how you can make it:
Chicken Prep: mes To simplify things, cut chicken breasts into thin cutlets or strips before seasoning with salt, ground black pepper and taco seasoning of your choice (I recommend cumin, garlic powder and chili powder for that authentic Mexican flair).
Cooking Chicken: Preheat a large skillet over medium-high heat, add some oil, and then place your chicken pieces into it. Allow them to brown up on all sides until no longer pink on the inside; this should take about 5-7 minutes per side depending on its thickness.
A delicious combination: Salad and Guacamole make the ideal side dishes.

No Mexican meal would be complete without fresh salad and homemade guacamole to accompany any main course dish. Both recipes can easily be prepared at home and pair perfectly with their respective main courses.
Salad: Just cut up all of your favorite veggies – such as tomatoes, cucumbers, bell peppers and lettuce–then mix them all up in a bowl before tossing with olive oil and balsamic vinegar before seasoning to taste! Super simple!
Guacamole:
For this creamy yet tart dish, peel and mash an avocado using a fork, before mixing in finely chopped onion, lime juice, diced tomato, cilantro leaves, minced garlic as well as seasoning it with some salt and pepper before giving everything a good stir together to form this delightful guacamole recipe! Enjoy its delicious creaminess for any meal!
